Based in Devon UK, I write about wild and raw foods suitable for the UK climate. Some people are put off raw food if their hands get cold etc, but with a few adjustments then this should not happen. If we eat raw food that's tropical (useful in keeping the body cool) then we will suffer the cold right! I also think that we should eat food from our local environment and so wild food is the way to keep to that.

Vegan Raw Christmas Pudding with vanilla custard
This is an incredible pudding for the festive season, and the sauce is so creamy and sweet, it's just like vanilla custard!
2 cup figs
1 cup dates
1/4 cup gogi berries
2 cup sultanas
1/2 cup almonds
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Vanilla bean 1/2" piece
Put all the above in a food processor using s blade, till crumbly but still rough. Not to a paste!!!
1 cup soaked cashews
1/2" piece vanilla
1/4 cup maple syrup
1/4 cup water
Put the above in a high speed blender until smooth and creamy, no lumps!
Take small portions of the fruit mix and form into balls of whatever size you like, then pour over some vanilla custard..
Enjoy, it's amazing!!

Raw Vegan Mushroom Soup
Quick and easy soup, can be blended till warm..mmm
4 very large mushrooms
1/4 pint spring water
Clove garlic
Splash tamari
1/2 ripe avocado
Splash chilli sauce
Put all ingredients into blender and zapp till smooth and warm (I use vitamix)
I like to add a handfull of pine nut's on the top

Vegan Raw Noodle's with Tomato Sauce
This is my simple recipe for noodles
This is a single adult portion, do your maths for more
Courgette two small ones
Tomatoes 1 or 2
Avocado half (ripe)
Garlic clove
Lemon juice half of
1/2 Chilli (optional) I like mine hot in the Autumn
Olives as many as you like to add on top when you are done!
Take two courgettes and put into food processor using the large grater blade, you can toss these in olive oil if you like
Put the middle section of ingredients into a bender and blend till warm, pour over the courgette noodles and throw some olives on top
I like a drizzle of tamari on top..
Mmm - get stuck in

Vegan Raw Sugar Free Millionaires shortbread -Wow, really?
You will need a dehydrator for this
4 cups rolled oats (gluten free, if intolerant)
3 cups dates
1/2 cup almonds
1/2 cup cashews
1 Tablespoon cacao
spring water
Get your un-baking tray out and line it with grease proof paper (easier to get the flapjacks out later)
Put your oat's into a food processer with s blade and blend till fine
Take 2 cup dates, 1 cup water, and blend till you have a caramel sauce, divide into two parts. Now mix one part into oat layer and spread onto the baking tray, un baking tray.
Take your reserved caramel (date mix) and spread over the oat's
Next take the almonds, cashews, cacao and 1 cup water and high speed blend till smooth like chocolate sauce
Pour the chocolate sauce over the flapjacks
Put into the dehydrator for 4 hours
Cut and serve
I recommend that after an 2 hour's to take your tray out of the dehydrator, lift your shortbread out of the tray carefully and pop it back in straight onto the tray of your dehydrator - it will dry out better without the un-bake tray

This is a really simple desert I made with my two children the other day, it was delicious and only took 15 mins to make in total

3 ripe bananas
Cup walnuts (soaked is best) but I didn't get round to it. I say blended nut's are going to be easy to digest anyhow
Cup organic dates
Cup cashews (organic) soaked if poss, but they are blended down anyway
Maple syrup
1/4 cup spring water
Medium sized pie dish
Into a food processer put the walnuts and make to fine crumbs, line the pie dish and press down
Slice the bananas and place them down on the crust, fill any gaps
Into a vitamix or similar place the dates and half a cup maple syrup, now pour this over the bananas
Next take the cashews and blend them with half a cup of water and 1/4 cup maple syrup, blend this till creamy and simply pour over the date mixture
Leave in the fridge, or go on and enjoy right now!!!

Simple green juice without a juicer (make with blender)
Who want's to juice without a masticating juicer?
And it's easier without having to chop small pieces to fit into the tube
Take a handful of kale
Squeeze half a lemon
10-15 stem and leaves fresh coriander
Add a litre of spring water
Teaspoon of spirulina
Blend away till smooth
Now - take a sieve and pour contents into it over a jug of your choice
I like to pour into a couple of mason jars with lids and handles - one for the fridge and one for on the go!, I bought 4 pint sized mason jars with lids from Amazon see below, I also use them to store food items in such as hemp seeds, cacao.
This juice helps to pull heavy metals from out of the body!

pinch sea salt
Tablespoon maple syrup/ or similar

Raw Lunch - Courgette noodles with creamy tomato and nettle sauce
Here is a quick and simple recipe for a raw food lunch that includes some wild food necessary to obtain deep rooted nutrients from fertile soil that has not been depleted due to industrial crop growing.
So what we go:
Take 2 small courgettes or 1 large one and either use a manual hand cheese grater or slicer, or a food processor using the large grater attachment, or a hand noodle maker.
Take 3 medium tomato's, cut 5-6 nettle leaves and place in a blender with half a ripe avocado. At this stage you can add some garlic and a few olives (un-pitted) and blend till smooth
Toss the courgette noodles in olive oil with a little sea salt, then pour over the sauce and enjoy

Wild Green Smoothie with Nettles and Dandelion's
I enjoy a raw food lifestyle and have noticed incredible health benefits along my journey the past 3 years. I stopped raw food and my health deteriorated very quickly and so I went back to raw till 4 and this is working well, till 4 is on whole foods and no sugar, bread, dairy etc..
The other change I made was to add wild foods to my diet, after all is raw food that's been sat in a shop for a few days really that vital still? No, not really!
I now add nettles that grow wild and pop them in my smoothie in the morning, or add to juices that I made around lunchtime.
So here goes my personal recipe
I melon of your choice
7 snipped leaves of nettles (top leaves) straight into a colander
3 dandelion leaves (from a dog walk free zone)
1 banana (optional) for breakfast bulk
1 date (optional) for sweetness
Blend away until the leaves are blended finely
Enjoy!
